Banana bread was my first cake I ever made with the help of my mum, back then I was a teen. The thing I like with banana bread is the rich  banana flavor that it gives you which is something that I am going for in today’s recipe, but with a twist of chocolate.

Recipe

In another bowl, mash the 4 bananas with a fork add egg,oil and melted margarine. Make sure everything is well incorporated so well and add dry ingredients to it.Fold the dry ingredients and bake for 35-40 minutes for 170 degrees.

1 tsp of salt

4 tbsp of melted margarine/butter

After the dough has doubled in size, remove in the bowl and knead in a clean surface for a few minutes.Divide it into three balls, then form a long string of dough for braiding as shown below.

Orange chiffon cake

Chef Raphael is one of the best chef here in Kenya. I was recently trained by him and it was a great honor to be one of his students.I took up the online course on how to make this delicious and moist orange cake. In fact delicious is an understatement. My mum has never liked cakes because she is not into sugar, but this one really got her!The recipe is as below:

6 large eggs – separate the egg whites from the yolk.

225 grams of all purpose flour

300 grams of caster sugar/white sugar-reserve 50 grams for egg whites

1 tsp of baking powder

1/2 tsp of salt

3 large oranges- grate the zest

orange zest

1/2 a cup of vegetable oil

3/4 cups of freshly squeezed orange juice

1 tsp of vanilla extract

IMG_20170607_124915[1].jpg

Method

Preheat the oven at 180 degrees

Mix the dry ingredients together i.e flour and sugar

Using a separate bowl, mix the wet ingredients together i.e orange juice, vegetable oil,and egg yolk.

Then add them to the dry ingredients. After that, add the orange zest, baking soda ,salt and vanilla extract.

In a separate dry bowl, beat the egg whites until add  the remaining sugar and beat until its thick and white.

Lastly, add it to the other mixture and fold gently.

Bake at 180 degrees for about 30-40 minutes.

Tip:I noticed that using vegetable oil makes the cake moist compared to butter/margarine.
